Riscaldate l&rsquo;olio d&rsquo;oliva insieme al burro in una padella ampia fino al punto di fumo. Rosolate le costolette a fiamma viva per circa 5 minuti per parte. Nel frattempo lavate, asciugate e staccate gli aghi dai rametti del rosmarino, sbucciate l&rsquo;aglio e sminuzzatelo insieme al rosmarino quindi aggiungete il trito sulla carne e fate cuocere il tutto per altri 5 minuti.
