Quando l&rsquo;olio \u00e8 sufficientemente caldo inserite la carne e fatela colorare. Tritate finemente la cipolla e la carota ed aggiungeteli alla carne appena sar\u00e0 ben dorata, sfumate con il vino e fatelo evaporare. Regolate la fiamma ed a fuoco medio basso proseguite la cottura; bagnate con il brodo caldo, salate, pepate ed aggiungete il concentrato; continuate la cottura per circa un ora a tegame coperto.
