Le metto in una ciotola, aggiungo il burro a pezzetti, il sale, il pepe e la noce moscata. Mescolo e, a parte sbatto le uova come per una frittata che poi unisco al pur\u00e9. Amalgamo bene l\u2019impasto fino a renderlo omogeneo e liscio. Con l\u2019aiuto di una sac-a-poche con il beccuccio a stella formo dei piccoli ciuffetti sulla leccarda rivestita di carta da forno.
