Avevo un coniglio nel congelatore e una voglia irrefrenabile di pasta fresca &#8230; ho fatto due conti, un indagine delle provviste &#8230;\u00a0 ed eccovi la mia nuova ricetta:<\/p>\n<p><strong>Ingredienti per 4 persone:<\/strong><\/p>\n<ul>\n<li>200 g di polpa di coniglio tagliata a dadini;<\/li>\n<li>90 g di pomodoro fresco privo di buccia e semi e tagliato a dadini;<\/li>\n<li>1 bustina di zafferano;<\/li>\n<li>1 spicchio di aglio;<\/li>\n<li>1 rametto di dragoncello fresco;<\/li>\n<li>1 bicchierino di grappa \u00ab\u00a0Druissi\u00a0\u00bb;<\/li>\n<li>1 mestolo di brodo;<\/li>\n<li>4 cucchiai di olio extravergine di oliva;<\/li>\n<li>farina bianca qb;<\/li>\n<li>sale e pepe qb.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong>Preparazione a modo mio:<\/strong><\/p>\n<p style=\"text-align: justify;\">Per prima cosa disosso il coniglio e taglio la polpa a dadini. Le ossa le uso per il brodo:\u00a0 che preparo insieme a sedano, carota e cipolla e lo user\u00f2 per bagnare il rag\u00f9. In una casseruola scaldo l&rsquo;olio e lo spicchio di aglio quindi quando colorito lo elimino. Unisco i dadini di coniglio (precedentemente infarinati) che faccio rosolare a fiamma vivace, sfumo con la grappa e lascio evaporare; insaporisco con il dragoncello sminuzzato e lo zafferano diluito in poco brodo caldo. Regolo di sale e pepe. Unisco i dadini di pomodoro e proseguo la cottura con il brodo.
