Perfetti per l&rsquo;aperitivo accompagnati da un buon bicchiere di vino!\u00a0 \u00e7a va sans dire che uno tira l&rsquo;altro quindi una sessantina di bign\u00e8 basteranno appena se avete molti amici! La ricetta \u00e8 dello chef francese Alain ducasse una sicurezza; mi son permessa di aggiungere la fleur de sel per dare un tocco di salinit\u00e0 in pi\u00f9 al bign\u00e8 che risulta leggermente dolce grazie al\u00a0 gruviera. Potete sbizzarrivi utilizzando altri formaggi tipo fontina, montasio, o ancora emmental &#8230; provate. Il primo esperimento delle goug\u00e8res risale a qualche tempo fa: non avendo fatto una foto decente le ho rifatte oggi ed ho provato a congelarle&#8230; venerdi ho ospiti quindi vi far\u00f2 sapere se i bign\u00e8 cotti congelati e scongelati son ancora buoni!<\/p>\n<p><strong>Ingredienti per 60 choux:<\/strong><\/p>\n<ul>\n<li>120 ml di acqua;<\/li>\n<li>120 ml di latte;<\/li>\n<li>110 g di burro;<\/li>\n<li>110 g di farina 00;<\/li>\n<li>4 uova;<\/li>\n<li>100 g di gruviera grattugiato;<\/li>\n<li>gruviera grattugiato per cospargere i bign\u00e9;<\/li>\n<li>1 pizzico di noce moscata;<\/li>\n<li>sale, fleur de sel qb.<\/li>\n<\/ul>\n<p><strong>Preparazione a modo mio:<br \/>\n<\/strong><\/p>\n<p style=\"text-align: justify;\">In un pentolino porto l&rsquo;acqua, il latte, il burro,\u00a0 a cui aggiungo il sale e la noce moscata a bollore. Tolgo dal fuoco ed aggiungo la farina setacciata in una sola volta mescolando energicamente. Riporto sul fuoco e cuocio fino a quando l&rsquo;impasto si staccher\u00e0 dalle paretti del tegame. Lascio intiepidire quindi unisco le uova amalgamandole una ad una. Quando l&rsquo;impasto sar\u00e0 omogeneo aggiungo il formaggio grattugiato. Con l&rsquo;aiuto di un sac a poche formo i bign\u00e9 direttamente sulla leccarda da forno unta con il burro. Cospargo i bign\u00e9 con il formaggio grattugiato e la fleur de sel. Inforno per 10 minuti a 210\u00b0 e successivamente a 180\u00b0 per 5 minuti o finch\u00e9 i bign\u00e8 saranno gonfi e dorati. (forno ventilato).
