E&rsquo; una ricetta deliziosa, veramente fresca e profumatissima. L&rsquo;ho abbinato alle trigliette, la volta scorsa invece con dei gamberoni appena saltati&#8230;&nbsp; e davvero molto versatile! La ricetta \u00e8 per 4 persone, ma se ne avanza un po&rsquo; condite delle bruschette per un aperitivo sfizioso ed in sintonia con la pasta. Se proprio non sapete cosa farci, congelatelo &#8230; io faccio cos\u00ec!<\/p>\n<p><strong>Ingredienti per 4 persone:<\/strong><\/p>\n<p>Per il pesto di peperoni:<\/p>\n<ul>\n<li>2 peperoni gialli puliti e pelati;<\/li>\n<li>60 g di pinoli;<\/li>\n<li>100 g di parmigiano reggiano ;<\/li>\n<li>60 g di pecorino romano;<\/li>\n<li>1 spicchio di aglio;<\/li>\n<li>2\/3 cucchiai di olio extra vergine di oliva;<strong><br \/>\n<\/strong><\/li>\n<li>sale qb.<\/li>\n<\/ul>\n<p><strong>Per le trigliette:<\/strong><\/p>\n<ul>\n<li>filetti di triglie qb;<\/li>\n<li>olio extra vergine di oliva;<\/li>\n<li>1 spicchio di aglio in camicia;<\/li>\n<li>1 rametto di timo fresco;<\/li>\n<li>sale qb.<\/li>\n<\/ul>\n<p><strong>Preparazione a modo mio:<\/strong><\/p>\n<p>In un mixer frullo tutti gli ingredienti, aggiungo a filo l&rsquo;olio extra vergine di oliva fino ad ottenere una crema liscia ed omogenea con la quale poi andr\u00f2 a condire le linguine. Volendo, qualora fosse necessario, \u00e8 possibile ammorbidire il pesto con l&rsquo;acqua di cottura della pasta. Pulisco e sfiletto le trigliette quindi in un padellino scaldo un cucchiaio di olio e vi faccio soffriggere lo spicchio di aglio ed il rametto di timo fresco. A questo punto elimino aglio e timo ed aggiungo i filetti delle trigliette tagliati in piccoli rombi; porto a cottura e aggiusto di sale alla fine.
